Recipe: Never-Dry Scrambled Eggs and Egg White
Many meal plans list eggs (for good omega-3 fat) and egg white (for protein) under Meal #1. Here’s how to cook them together to make something palatable enough where it doesn’t need to be doused in ketchup for moisture.
Difficulty: Easy
Number of Ingredients Needed: 1-2
Equipment Needed: Nonstick skillet
Ingredients
Whole eggs
Liquid egg white (e.g. from carton)
Directions
Preheat skillet to medium-low heat and lightly coat with cooking spray
Add all eggs and egg whites directly into the pan, don’t worry if it begins to turn white right away.
Add seasoning to taste.
Continuously mix the eggs on the pan without stopping until they’ve just come together and you can no longer spot raw egg white, at which point immediately take off heat and serve.
Notes
Eggs (and especially egg whites) go from cooked to dry in less than a minute, hence why you want to continuously stir them (so they cook uniformly) and take them off the heat as early as possible.
If you have low to no whole eggs in your meal plan consider seasoning with turmeric to avoid an unappealing white appearance.
If all else fails, fetch the sugar free ketchup (it’s basically just tomatoes, vinegar, and salt so it wont ruin your diet).
